Icebox Pops: Avocado-lime ice pops

These creamy (and rather healthy) ice pops were surprisingly refreshing — thanks to the lime, most likely. I can imagine what a splash of tequila would add to these pops…

  • 1/4 cup honey
  • 1/2 cup warm water
  • 1 avocado, diced
  • juice and zest from 1/2 lime
  • pinch of salt

Dissolve the honey in the warm water and add to a blender. Add the avocados, lime juice and zest and salt. Puree until smooth.

Pour the mixture into four ice pop molds and freeze.

Makes four ice pops.
