A Day in the Kitchen

Alex has been building a boat (yes, a boat) so he’s been spending more time in the garage. As a result, I’m spending more time in the kitchen! Sunday was a lovely day for cooking and baking and it kept me busy, prepping for the week. I thought this would be a good day to link up with Jenn and show you what my meals have been looking like!

I started the day off with a leisurely breakfast of Chobani strawberries blueberries granola. I’ve been loving Hudson Henry Baking Co’s cashew granola which I can get through Relay Foods! I had this with a cup of coffee while I read a little bit. (I just started a new goal-setting book and I can’t wait to tell you more about it!)

Around 10am I stared making soup which would eventually be lunch. I almost couldn’t let it simmer until lunch because it smelled so good!

I used Bob's Red Mill Soup Mix, Veggie, 28-Ounce Units (Pack of 4)

" target="_blank">Bob’s Red Mill Vegi soup mix with a “not-chicken” bouillon cube, some fresh carrots and chopped onions. I know it doesn’t look all that great but it actually hit the spot! I had a little Greek salad with this as well.

In the afternoon I started baking. I played around with a zucchini muffin recipe, which I’ll post soon!

Obviously I had to taste one… quality control, people. Paired with a Gingerberry Kombucha, this was the perfect afternoon snack! (These muffins are sooo chocolatey! I’ll share the recipe soon!) I’ve been packing these with me as an afternoon snack at work. They’re so portable! I may try freezing the extras but I haven’t had a lot of success with freezing muffins. Any tips?

Later in the afternoon, Alex and I looked at an open house since we’re casually in the market for a house… and then went to church. When we got home, I had a quick taco and then headed off to yoga.

It’s hard to tell from the picture but it was quinoa brown rice on the bottom, then black beans, tomatoes, grilled peppers, and red onion. I think I also squeezed some salsa in there. It hit the spot and it was luckily a pretty quick dinner.

The sunset yoga class at the VMFA (Virginia Museum of Fine Arts) was perfect. I went with a bunch of friends and the weather was amazing. The sun was still up when we started, but as you can tell by that second picture, it was pretty much dark by the end.

Such a relaxing way to start the week! I found the second photo on the FLOGA Facebook page. If you’re in Richmond, you should come join next time! I’m totally hoping this is a regular occurrence.

When I got home I hung out with Alex and ate the last of our leftovers from Shyndygz. I can’t believe I forgot to snap a photo of that dessert monstrosity. You know it’s good when I can’t even stop and take a picture. Even just half of the half was a whole lot of cake. Also not a bad way to start the week
