The feeling around the Porch is a bit more excited than usual this week - We're expecting family to visit this weekend, and, with a big college football gameday coming up, the atmosphere around the house is charged with anticipation. I am posting this menu knowing the weekend menu plans may end up being altered. We all know that plans can change and it's good to be flexible so there is no stress.
I am cooking a large package of boneless, skinless chicken breasts in the slow cooker this week for shredding. I will use the shredded chicken in the
Gyros and
Chilaquiles and freeze any leftovers. We are preparing soup beans and we made enough that we'll have some leftovers for a future chili recipe as well. Have a great week and I hope you'll find something yummy for you and yours to share.
