Is there such a category as double comfort food? Since it combines two classics - chili and macaroni & cheese - Mac & Cheese Chili may be staking out new ground. With cheesy deliciousness and spicy heartiness in a single bowl, how could it be anything but great? We prepared this for one of our Game Day gatherings and it was a big success (and we won the game!). This Mac & Cheese Chili is the ultimate one-pot meal, which means prep and clean up are as easy as the dish is delicious!
Mac & Cheese Chili Ingredients: 2 T. olive oil
1 medium onion, diced
2 T. minced garlic
2 lbs ground beef
2 cans diced tomatoes
2-15oz. cans light red kidney beans, drained
1 32oz. container chicken broth
1 lb box elbow macaroni
2 T. chili powder
1/2 t. cumin
1/2 t. garlic powder
1 1/2 cups cheddar cheese, shredded
salt and pepper, to taste
Directions: - In large cook pot, add olive oil, diced onions, and minced garlic. Saute until onions are tender.
- Add ground beef to the pot and cook until browned through.
- Add diced tomatoes, beans, broth, and seasonings. Stir.
- Bring to boil and add macaroni. Cover and reduce heat; allow to cook until macaroni is tender (see pkg directions).
- Stir in the cheese. Serve immediately. -adapted from Cooks.com
