a recipe post: green goddess dressing


everyone and their mom has their own version of green goddess dressing, so i figured i'd share mine with you. i like it in the summer as a salad dressing, on pasta salad or even just as a dip for veggies. it's refreshing and tangy. everything you want for the summer.
green goddess dressing
(makes about 2 cups)
approximately 20 basil leaves
a good handful of italian parsley leaves
another good handful of cilantro leaves
about 3 T chopped chives
1 cup mayonnaise
juice of 1 lemon
1 avocado
1 package of anchovy filets (6 or 7 of them? i think? i just put them all in)
about 1 cup of olive oil
salt pepper to taste

throw everything except the olive oil and salt pepper into a blender. blend that baby up and slowly stream in your olive oil. keep adding the oil until you reach your desired consistency. if it's too thick for your liking, you can add some water to thin it out. give it a taste and add in your salt pepper.
that's it! i swear! it's easy peasy and can keep in your fridge for about a week. i make a big batch so i can use about half on a pasta salad, and then use the rest as a dipping sauce for snacks. you can always vary it by adding garlic, different herbs, less anchovies, whatever. but that's my basic recipe!
