What We’re Eating Sunday…The Spaghetti Edition.

A’s best friend is here. Actually, she’s more like a second daughter so that would make her A’s sister, just a few weeks older so I guess that would be an interesting birthing situation if I had given birth to both of them. I didn’t. So we’re back to the best friend description.

Ever since A and I got back from vacation a couple of days ago we’ve been doing our best to do almost nothing. Like, literally, nothing. I mean, today the extent of our ‘doing’ was getting gas and going to the store to prep for second-daughter’s arrival. That’s it. That was enough, trust me.

Last night, while A and I were watching “Wreck it Ralph” and “Brave” we made up a shopping list. For the past three years I’ve been by myself so cooking was whatever I wanted it to be on the rare occasions I felt like cooking, usually on the weekends when A would come home from school. Now that’s she’s back in New York to finish her undergrad studies, we realized that we need to spend more time in our kitchen, which isn’t a bad idea. We like it in there.

So in honor of reminding ourselves that cooking is a good idea (and apparently, wealthy people already know this), we’re testing out “What We’re Cooking Sundays” here on the blog. I figured that as I’m looking for hobbies to learn or get better at during the new year, spending my Sundays cooking can’t be a bad thing. I love the kitchen and everything about it so why not pick at least one thing I don’t need to take a class in at some point (unless I really just feel like taking a class on making macaroons or something fancy). Yum. Macaroons.

Tonight’s “What We’re Cooking” is spaghetti with fresh spinach and kale. Oh, and a lot of garlic. We can’t get enough garlic in this house. If any vampires read this blog, don’t bother coming here unless you’ve been inoculated against garlic.

We started with a whole bulb of garlic (told you), 1 bunch each of chopped fresh spinach and kale, a mix of ½ tsp each black pepper, crushed red peppers and ½ of my favorite coarse salt. Oh, and just because France is always in this house, ½ tsp of Herbs de Provence. For the meat, we used ½ lb each ground pork, lean beef and veal. Of course, this is a totally meatless-friendly meal, so run amok. If my mom was alive, she might have added shredded chicken or sliced turkey hot dogs. Basically, add anything you like. Different vegetables? Sure. We almost added a bunch of squash. Next time! We went with whole wheat spaghetti noodles (No. 8s) because A likes a slightly thicker noodle.

While everything was sizzling away, I made a quick salad of mixed spring greens, marinated artichokes, anchovies, 1 sliced avocado (a little bruised, but what in life isn’t a little bruised?) and fresh parmesan, Asiago and pecorino cheeses. (And my super fancy black salt, just because I like it.)

Throw in a little warm bread and I think the girls are happy. Wait, let me ask them. Girls, are you happy? Yes. You’ll have to trust me. I didn’t get any video or audio.

They are too busy telling me stories and eat to actually answer me so I’ll take that as a definite yes. I also forgot to get a picture of them eating – no, let me rephrase that: They wouldn’t let me get a picture of them eating.

Next up, we’re going to bake homemade chocolate chip and granola cookies. We’ll see how this goes because I have an egg allergy and I’m a little worried. I’m still going to eat the cookies, though. Without a doubt.

“What We’re Cooking Sundays”…next week: Machaca, to welcome in the new year. I’m going to get excited right damned now.

Oh, the Hello Kitty slippers are mine (now) and they will probably make a lot of appearances on Sundays. They were rocking out to Q104.3 all night because Heart and Stevie making cooking so much more fun.
