I don’t eat gluten free and I know gluten free stuff is usually likened to cardboard. My mother-in-law eats gluten free and she is often left out, because preparing gluten free foods is so complicated. Or at least it was. If you or someone you know eats gluten free, it doesn’t mean you are suddenly an expert baker with lots of time and money–making everything from scratch. I was really excited when I found out about Pilsbury’s new line of Gluten Free products. There are gluten free pie dough cookie dough and pizza dough. You can find them in the refrigeration section of your grocery store. I’ve only tried the cookie dough so far, and it is delicious. Perfect for holiday baking.
I made yummy gluten free s’more chocolate chip cookie bars using the Pilsbury gluten free chocolate chip cookie dough.
For the crust you need 2 cups of Rice Chex (gluten free), 1 tbsp of brown sugar, 2 tbsp of melted butter. Combine–blending well. Press mixture on the bottom of pan. Cook at 350 for 10 min.
For the bars you will need Marshmallows (be sure they are gluten free), Hershey Milk Chocolate Bars (gluten free) and Pilsbury Gluten Free Chocolate Chip Cookie dough. You really can layer the ingredients in any way you choose. I opted to layer the chocolate bars, then press in the Pilsbury Gluten Free Chocolate Chip Cookie Dough and topped mine off with marshmallows. Cook at 350 for 35 minutes.
Let cool, cut and serve.
