Peace, Love and Low Carb – Soups and Stews Cookbook Review

It’s been a while since I shared some food around here and I guess it’s pretty fitting for Thanksgiving that I’ve been doing some cooking lately. I’m not actually doing much cooking for Thanksgiving this year, but I am cooking for the day after – a sort of delayed Thanksgivingukkah.

And, now that the weather has cooled off my slow cooker was ready to cook up some soup.

Perfect timing for some soup cravings because Kyndra, from Peace, Love and Low Carb, just released her third cookbook and she sent me a copy to review and share with all of you.

After reading through the book, I found many recipes that I wanted to make. The list of contenders was long: Broccoli Cheddar soup, Clam Chowder, Hearty Beef Stew, Kickin’ Chili, Tomato Basil Soup, Spicy Sausage and Sweet Potato Soup…

I decided to tackle the Creamy Mushroom and Carmelized Onion Soup.

And, tackle is not the right word at all. The recipes are easy! I love a recipe that says: “combine all ingredients in slow cooker and cover”. My favorite kind of recipe.

I did take a few pictures of my recipe, but Kyndra’s pictures are better.

The Creamy Mushroom and Carmelized Onion soup is not a ‘combine in slow cooker and walk away type recipe’, there was a little hands on required. I did have to carmelize the onions before putting them in the crockpot. And there was a step of adding the creamier ingredients with an hour left in the cooking time. But, it was all worth it. I made the recipe on a Sunday when I had the time to do some prep work (I was cooking up a freezer stash of pancakes that day, too). And, the recipe lasted for several days, so all the prep time paid off!

This soup is amazing. My husband gave it the seal of approval with the ‘you can make this one again”. That’s high praise from him. I can’t wait to try more of Kyndra’s drool-worthy recipes. I think the chili is going to be next.
