Food solves the problem – WIAW

Happy Wednesday everyone! Remember that horrible run from last week? I think it was actually a symptom of a bigger issue and I’m happy to say that things have gotten better.

I think I figured out the problem… I’m having some female issues – and I think it’s left my body wiped out. I’ve diagnosed myself with a little bit of anemia. I’ve always been rather low and just think that the way things have been going lately, it’s just running me down more and more. I woke up the other morning with a fever, it didn’t last long and I really didn’t have any other symptoms other than being completely exhausted. So, I spent the day in bed and eventually made some dinner filled with iron rich foods.

The exhaustion left me feeling a little confused. As much as I think food can help alleviate problems, I also knew that I should probably take a supplement to help with my iron. I was conflicted because I really don’t like to take supplements, my stomach isn’t really happy when I take vitamins. But, I needed to do something.

I did go for a run this past weekend (that may not have been a super wise decision, but I really was feeling better by Saturday morning). I ran 3 miles to the park and met my running friend for 2 more. Even though I was feeling better, I was worried about how it was going to go. I even sent K a text the night before with some hesitation. I wasn’t sure if I was rested up enough. I took my time in the morning and headed out and enjoyed the run. It wasn’t all sunshine and unicorns, but it was good and especially with the bonus of meeting my friend at the end, it was pretty comfortable.

I picked up some leafy greens at the Farmers’ Market after our run along with some other yummy things including cauliflower (yay for roasted cauliflower aka Pufferfish a la Carla)

My running schedule is changing up a bit with my son’s sports seasons changing, so while I’m figuring all of that out and giving myself a little bit of a break, I’ve found a little time to do some cooking. So, I’ll share a bit with you.

Pepperoni Pizza Stuffed Bell Peppers – from Peace, Love and Low Carb

Slow Cooker Beef Enchiladas – a combination of a few recipes – but the beef used this one from AddAPinch.com

I did take an iron supplement for a few days. I was right in that it completely upset my stomach. Ugh. Not sure what’s worse – total exhaustion or painful stomach that feels like it has rocks in it. So, I’m going to stick with trying to get lots of greens and red meat and we’ll see how that goes. If this happens again next month, I promise I’ll go to the doctor.

I’m linking up with WIAW – What I Ate Wednesday at Peas and Crayons today – oh – and did you all have pancakes yesterday in celebration of National Pancake Day? We did – pancakes and bacon for dinner!! Oh Yea!

And on a final note – Friday begins dance competition season around here. I’m excited to watch the long months of hard work pay off for Dancing Girl and her team. I’ll be spending this first weekend at their convention – thankfully the schedule for both days will give me time to hit up the hotel gym. And maybe there’ll be some quiet time to work on all the unfinished blog posts that I’ve started. Maybe. The downside is that it’s two weekends in a row of late nights and I’m so bad at late nights.
