What’s for Dinner?

Just popping in for a quick meal planning update. I’m off to spectate and cheer on all my friends running the Seacoast Half Marathon today. That’s right another DNS. I’m bummed I’m not running my all time favorite race, but it’s for the best. I’ve got 5 weeks till Honolulu and I don’t want to screw anything up!

What’s for dinner this week?

Sunday – Baked Salmon w/ Saweet! Potato Casserole with Crunchy Nut Crumble

Monday - Poached eggs w/ avocado toast

Tuesday – Easy Spaghetti Squash Pizza Bake

Wednesday – Peanut Sauce Stirfry Baked Broccoli Slaw Eggrolls

Thursday – Pumpkin and Kale Pasta Bake

Friday – Leftovers

Saturday – out
