This recipe is so easy, it’s perfect for getting the kids in the kitchen with you. With only three ingredients – one being delicious Mama Mancini’s Meatballs – these Meatball Biscuit Bites are ready in 20 minutes and great as an after school snack or a kid-friendly dinner. Check ‘em out…

Kids in the Kitchen – Meatball Biscuit Bites

Ingredients:

  • Mama Mancini’s Meatballs and Slow Cooked Italian Sauce (either Beef, Chicken, Pork, or Turkey – any of them work!)
  • refrigerated biscuit dough
  • shredded mozzarella cheese
  • nonstick cooking spray

Steps:

Spray a muffin pan liberally with cooking spray. Take a refrigerated biscuit round and separate it into two layers. Press each layer into a muffin tin. Repeat until all muffin tins are full.

Place one meatball (no need to preheat!) with a little sauce in each biscuit lined muffin tin.

Sprinkle meatball biscuits with shredded mozzarella cheese and pop in the oven for about 15 minutes. Let cool and ENJOY!

Sawyer and Priscilla LOVED these for their after school snack. And I loved that they were getting some good protein, too.
