Quick and easy Chicken Piccata

Hey there everyone!

Day one of back to school and we all survived!

I decided I would make a nice dinner for the family tonight. My kids enjoy when Mom makes something with a little more love and thought. Who doesn’t.

Today I am sharing a quick and easy Chicken Piccata recipe.

The original recipe came from all recipes.com. A friend of my recommended it. I did however improvise some of their instructions to make it a tad easier.

I had to buy the wine with a rooster on the label. Of course. This is a cheap bottle of white.

I would much rather use white wine than the cooking wine.

There is only one step prior to putting in the oven. The All you recipe does not call for putting it in the oven. However, I like it that way better.

getting very moist and abundant flavors of lemon, capers and white wine juices.

I suppose you want the recipe now that your mouth is watering.

I served this dish with fresh broccoli and garlic mashed potatoes.

Ingredients
  1. 6 large pieces of skinless boneless chicken breast cut in half
  2. Salt and pepper to taste 1 cup of All purpose flour
  3. 1 clove Garlic, minced.
  4. 1/4 lemon juice
  5. fresh lemon
  6. capers to taste. I used half a jar
  7. 4 tablespoons of butter
  8. parsley
  9. Vegetable oil
  10. 2 cups of White wine

Instructions
  1. I added my flour to a plate and did this next to the sink. I lightly wet my chicken with water, salt and peppered it lightly and coated both sides of chicken in flour. In the meantime, I had my skillet heating up with vegetable oil. I simply coated the bottom of the pan generously. Add your chicken in and lightly golden brown chicken on both sides. About 3-4 minutes on each or so on medium heat.
  2. I took my casserole platter 9 x 13 in size and sprayed the bottom of that with Pam. I added my browned chicken in single layer form.
  3. Next, I cut up a fresh lemon in thin slices. I added the lemons,lemon juice, capers {drained and rinsed}, butter,white wine and garlic to the oil that the chicken was cooking in. I let that simmer for about 10 minutes. I then poured it over my chicken, added a dash of parsley, salt and pepper and baked it at 325 for about 25-30 minutes. Uncovered. Serve with rice or potatoes and fresh veggie. Absolutely delish.
