Mediterranean Shrimp Pasta


I am bringing everyone a special treat this summer! I have asked many of my dearest Friends that I have met while blogging to join me here with some of their special posts!! I am so excited that you will get to know my friends and I just can't wait.
First up is my close Friend Linda of With A Blast!! She lives in South Africa and I have known her for about two years!! She is a special person and has many talents, you will find not only great recipes over at her place but some of the cleverest crafts!!

Linda here from WITH A BLAST and I am super excited to be guest posting at MY TURN FOR US.

Our family loves all kinds of cuisine but Mediterranean is on the top list. All the dishes are so colorful and bursting with flavor.
Mediterranean Shrimp Pasta = always a winner in my book and that is why I decided to share this Mediterranean Shrimp Pasta with you today. You might notice that I have a heavy hand with the Feta - feel free to use less {or more if you so wish!}. Simple reason for that, we are addicted to cheese, any kind and the more the better.
MEDITERRANEAN SHRIMP PASTA Serves : 4 INGREDIENTS: 1 TB Light Olive Oil2 t Garlic, crushed 500g Medium Shrimp, peeled and deveined 2 cups Italian Tomatoes, chopped 1/4 cup Fresh Basil, chopped 1/3 cup Kalamata Black Olives, chopped Freshly Ground Black Pepper 350g {raw weight} Angel Hair Pasta, cooked 1/4 cup Low-Fat Feta Cheese, crumbled/cubed
DIRECTIONS:
1.) Heat the Olive Oil and saute the Garlic 1 minute - add the Shrimp and cook 3 minutes or until pink.
2.) Add the Tomatoes and Basil - cook another 3 minutes until the Tomatoes are just tender.
3.) Remove from the heat - stir in the Olives and season with Black Pepper.
4.) Combine the Pasta and the Shrimp - toss well. Sprinkle with the Feta Cheese and serve immediately. Add some more Black Pepper if you prefer.
