Healthy Vegetable Beef Sloppy Joes Recipe


Man (and woman) cannot live on grilled chicken and brown rice alone, even when they’re trying to get healthy and lose weight.

Sometimes you need something a little heartier.

This healthy sloppy Joes recipe fits the bill, and it’s packed with lots of vegetables and good-for-you stuff.

We’re talking carrots, onions, sweet potato and tomatoes. (If you have picky kids, you can even steam and puree the vegetables, and they’ll never now these meaty sandwiches are good for them.

Can I get a yum?

I’ve never been a fan of sloppy Joes out of a can, not when it’s so easy to make them from scratch with ingredients you probably already have in your pantry and fridge.

And when you make them with extra lean ground beef — or even ground turkey or chicken — you can really control the fat and calories. Serve on a whole wheat bun — or one of these bread machine homemade hamburger buns.

If you want fries with that — and who doesn’t? — slice some potatoes into wedges, toss them a little bit of olive oil, season with salt and pepper and roast for 30 minutes or so in a 350-degree oven until browned. If you want to get fancy, add some herbs and spices.

Yield: 6 servings

A hearty vegetable-packed version of traditional Sloppy Joes. The sandwich filling cooks up in minutes using ingredients you probably already have in your pantry and refrigerator. These Sloppy Joes are a great weeknight meal because you can go from pantry to table in about 30 minutes.

Ingredients

  • 3/4 pound extra lean ground beef
  • 1 medium onion, diced
  • 3 carrots, peeled and sliced or diced
  • 1 clove garlic, minced (optional)
  • 1 medium sweet potato, baked or steamed, skin removed
  • 1 can condensed tomato soup or tomato sauce
  • 1 Tablespoon tomato paste
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1 teaspoon hot sauce
  • salt and pepper, to taste

Instructions

  1. In a large skillet over medium heat, cook ground beef, carrots and onions, until meat is browned and vegetables are soft.
  2. Add garlic, if using, and cook for 1 minute more, being careful not to burn.
  3. Add tomato soup, Worcestershire sauce, mustard, tomato paste, hot sauce and salt and pepper, to taste.
  4. Add baked sweet potato. Mash, as necessary.
  5. Stir to combine and simmer for 15 minutes until sauce thickens.
  6. Serve on whole wheat buns.

Notes

If you need to hide the vegetables from your kids, you can steam and puree the carrots and onions and add them when you add the tomato soup and other ingredients.
