Patriotic Mini Fruit Pizza Recipe


What do you want? A cookie? Or how about some cake? Or maybe you prefer a healthy dessert, like fruit.

Well, I’ve got you covered with this easy mini fruit pizza recipe that’s perfect for your 4th of July parties and barbecues.

And did I mention they were easy to make? No need to sweat over the stove or dirty every dish in the kitchen in pursuit of the perfect patriotic dessert.

These sugar cookies, topped with homemade cream cheese icing and fresh berries, will do just fine!

I served these for our Memorial Day family picnic, and I’ll probably make them again for the upcoming July 4th barbecue at my mom’s house.

To make these cookies, I simply adapted a fruit pizza recipe. I’m not reinventing the wheel here, and I’m sure it’s been done before. But I wanted to share anyway.

It’s no fun making a batch of cookies and keeping them all to yourself!

I also think fruit pizza cookies are the way to go for an outdoor party because they’re so portable. A wedge of fruit pizza is trickier to handle when you don’t have a plate.

Print Patriotic Mini Fruit Pizza Recipe

Ingredients

  • 1 8-ounce bar cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 teaspoon vanilla
  • 1 package refrigerated sugar cookie dough
  • Fresh blueberries
  • Sliced strawberries

Instructions

  1. Prepare sugar cookie dough according to package instructions. Bake until lightly browned, but not too dark. Cool cookies completely on a rack.
  2. Once cookies have cooled, prepare your frosting by creaming together cream cheese, sugar and vanilla in a mixer.
  3. Ice each cookie with a generous amount of frosting. Set aside until just ready to serve.
  4. Top each cookie with blueberries and strawberries.

As the recipe notes, don’t add the fruit to the cookies until just before you serve them. You may also want to hold off on frosting them until close to serving time, as well, to prevent the cookies from becoming too soft.

I also recommend leaving the fruit off some of the cookies to please the pickier guests — kids! Add a festive touch by dusting them with red and blue sanding sugar or topping with red, white and blue sprinkles.
