FOOD DIARY #25

Breakfast was a spicy feast! As well as my usual eggs and avocado I had some leftover salsa fresca that I made the other day. So so good!

It rained yesterday so we headed to a shopping centre for a browse, I knew I would get hungry and there aren’t too many vegetarian options on the go that are healthy here so I decided to pack up some leftover butternut squash pancakes and take them with me for lunch. They went down a treat!

I picked up a julienne peeler when shopping so for dinner I had my heart set on courgette “pasta” – I decided to try making some vegan meatballs from scratch to go with it. I made them from sundried tomatoes, grilled peppers, mushrooms, pine nuts, chickpea flour and brown rice. There were a few mishaps along the way including the oven going off but we got there in the end. I made spicy tomato sauce and I really enjoyed it!

After dinner I had some more of the date and walnut balls for dessert!
