FOOD DIARY #28

For the first time in a while, I started my day with a sweet breakfast. I’m not a sugary cereal kind of girl, it’s just not what my body wants in the morning, in fact I would rather eat lunch food first thing than a bowl of sugary food, but I do go through periods of eating oatmeal and loving it, protein pancakes too. Mostly in summer though! Technically not much has changed because this recipe still had two eggs in it but it felt like a big sweet deal ok? I made pancakes which contained only eggs, banana and a bit of oats whizzed up in the food processor. A food processor really is a girls best friend. The recipe is on my healthy living Instagram which you can follow here. I topped them with raspberries and honey and they were majestic. I even added a second pancake porn photo to this post so you could appreciate them. I didn’t have my true pancake equipment with me so they aren’t as round as usual, but yanno…

At around 1pm we went to the local farmers market (I did a little haul here) and there was a man there extracting raw juice from sugar canes. He was selling mojitos made from the juice and I thought it would be rude not to. I didn’t think they would be THAT strong since it was lunchtime but I was swaying after it! Compared to regular sugar the raw juice is actually very low GI and is alkaline so I told myself it was a healthy mojito. I know, I know.

For lunch I wanted something warm (and filling after my lunchtime cocktail) so I sliced up some courgette and made a quick tomato sauce from some passata and garlic. I baked the courgette in the sauce in the oven and then served it with my homemade brown rice “meatballs” from earlier in the week. I crumbled a cube of feta over the top and it was divine.

For dinner I had some spinach omelette, roasted carrots, grilled peppers and olives with a few slices of cheese. It was lovely!
