Bar #49: Salted Butterscotch Blondies



Butterscotch is the favorite ingredient at our house. We love us some butterscotch.

We put it in our pancakes.

In our monkey bread.

In our whoopie pies.

In our Neiman Marcus Bars.

In our cobbler.

In our oatmeal.

And cookies too.

We cannot get enough of it.

So needless to say, these Salted Butterscotch Bars were a HUGE hit. I bet they will be a hit in your house too.

Shopping List 1 box of yellow cake mix
1/2 cup vegetable oil
2 eggs 1 stick (8 tablespoons) butter
1 cup brown sugar
1/3 cup light Karo Syrup
2 cups butterscotch chips, divided
1 tablespoon of coarse salt (sea salt or Kosher salt)



Preheat oven to 350 degrees.

Grease (I used Pam) one 9x13 inch baking dish. Set aside.
In a mixing bowl, combine cake mix, veggie oil, and eggs with an electric mixer. Spread batter over the bottom of your pan. Bake 15 minutes.

Right before the 15 minutes is up, melt your butter, brown sugar and Karo syrup in a saucepan over medium-high heat. Allow to simmer one minute before removing from heat. Immediately stir one cup of butterscotch chips into your butter mixture after you have removed it from the heat.

After 15 minutes, remove your pan from the oven and pour your hot butterscotch mixture down over the top. Spread it out to cover and then sprinkle the remaining cup of butterscotch chips down over the top. Sprinkle salt on top and then pop the pan back in the oven and bake an additional 20 minutes.

Remove from oven and let stand at least 30 minutes before slicing and serving into bars.


Salt and butterscotch are perfect together! We just loved these little bars!
