Kahlua Mudslide Cheesecake



There are some things in life I will never understand.
I often hear folks say things like, "Why do bad things happen to good people?" or "Why do we exist?". While I tend to agree with the first statement, I do feel I somewhat have an understanding as to why they happen and why we are. I'm on about things I generally cannot wrap my head around; things that mystify or baffle me.
Take rude people for instance. I don't understand how someone can shoot shit out of their gob and not even bat an eyelash, as if it's the most normal thing in life. These same people that don't seem to care who they hurt or what their actions will do to others. I can't help but think that these same people started out as innocent children, you know? What happened or what steps lead to the point where rudeness became the norm? A spoiled childhood? A neglected one? A devastating loss? I grew up with my parents, grandparents, and teachers pounding it into me that, 'You should treat others as you want to be treated'. And I took that lesson quite seriously. And let me add that my childhood was less than stellar, but life is full of tests. It's full of happiness and joy, but it's also full of disappointment and heartache. You can allow bad things to hurt you or help you and you can allow the good things to inspire others, but there's no excuse for rudeness. Ever. Like the saying goes, "If you don't have something nice to say….."
I will never understand the entertainment value in watching horror movies. Being scared, sometimes for days afterwards, isn't something I consider a good time.
I will never understand how airplanes fly. Now I know I've mentioned this in previous posts several times, but it's NUTS, right? Planes are HUGE. They're heavy, they're made of metal and they carry tons of weight for crying out loud. Despite countless logical explanations and videos on it, I will never wrap my head around this.
I will never understand those who i n c e s s a n t l y talk about something they don't believe in. Take faith for instance. I have a very strong faith. I believe in God. I believe Jesus died for my sins. I believe He rose from the dead. No matter what someone has to say about it, my faith and my beliefs aren't going anywhere; they're firmly planted in the ground. So why waste hours upon hours UPON HOURS of energy, talking about something you don't believe?
I will never understand how words came to be, especially how swear words became swear words. Like, who decided that 'carrot' should be the name of a vegetable and 'shit' should be considered a bad word? Why not the other way around? I do have a bit of history for you. Now, I don't know how true this is, so don't quote me, but I was told by a professor that the 'eft' word originated back in the days of Yore. (I use Yore when I don't know the precise era). When a couple got married, it had to approved by the King before they could consummate the marriage. Tif it was approved, the couple would receive a plaque on their door with the acronym, 'Fornication Under Consent of the King. Read between the lines and you have your word. Crazy, right?
You know what else I don't understand? How someone can only eat one slice of this cheesecake and be completely satiated. Seriously folks, this is mega. Even if you're not much of a drinker or don't like alcohol, you will devour this cheesecake.
I promise.
In this particular case, it's best not to try to understand and just accept that it is what it is.

KAHLUA MUDSLIDE CHEESECAKE
Graham Cracker Base:
1¾ cups graham cracker crumbs ¼ cup granulated sugar 6 tablespoons unsalted butter, melted
Cheesecake:
3 - 8 ounce packages of cream cheese, at room temperature 1 cup granulated sugar 1 tablespoon pure vanilla extract or 2 teaspoons vanilla bean paste 3 large eggs, at room temperature ⅓ cup Kahlua Coffee Liqueur ⅓ cup Bailey's Irish Cream Liqueur 3 tablespoons vodka

Preheat oven to 350ºF. Place a large, heat-safe bowl of water on the rack directly under where cheesecake will be placed. This will help prevent cracks on the top of your cheesecake while baking.
In a mixing bowl, combine graham crackers, sugar, and butter together until incorporated. Press into a 9-inch springform pan, covering the sides and bottom. Bake for 8-10 minutes until golden brown. Remove from oven and set aside.
In a separate mixing bowl, using an electric mixer, beat together creme cheese and sugar. Add in eggs, one at a time, until fully incorporated. Add vanilla.
If you want to have a 'swirly' effect within your cheesecake, divide cheesecake mixture into two separate bowls; add Kahlua into one bowl and Bailey's into the other, mixing each until blended.
Pour Bailey's mixture into prepared base and Kahlua over top. Using a skewer, create swirls. It's a pretty subtle effect, but you can see it when the cheesecake is sliced. Because I love Kahlua, I placed several dots of the liqueur straight up on top of cheesecake and ran a skewer over the top. It will create a stronger swirl effect.
If you're not bothered about the effects, just add both liqueurs into cheesecake mixture and beat until blended. Pour into prepared crust.


Bake cheesecake for 40 minutes. Turn off heat, crack door, and allow to bake for 10-15 minutes more.
Remove from oven and allow to cool completely. Cover cheesecake loosely and place in fridge to chill for several hours.

Serve with whipped cream or Kahlua chocolate sauce.
