Pumpkin Bundt Cake with Cream Cheese Frosting

Pumpkin bundt cake with cream cheese frosting…ahh need I say more? I didn’t think I would be ready for fall desserts yet…but I am! I am into pumpkin anything already! I feel like its too soon, its not even October yet….and I already made pumpkin pancakes, pumpkin lattes, pumpkin halva and now this cake! Oh well what can I say…I love pumpkins!

This cake is moist, tasty and oh so good! The cream cheese frosting is amazing! I hope you enjoy this cake as much as we do! Enjoy!

Print Pumpkin Bundt Cake with Cream Cheese Frosting

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin spice
  • 1 tsp salt
  • 3/4 cup light tasting olive oil
  • 4 eggs
  • 1 cup pumpkin
  • Cream Cheese Frosting:
  • 1/2 pkg softened cream cheese
  • 2 cups icing sugar
  • 1 tbsp softened butter
  • 1 tsp milk

Instructions

  1. Sift together the dry ingredients. In mixing bowl, cream together the eggs and sugar, add in oil and pumpkin, slowly add the dry mixture in, combine until well blended. Pour into greased bundt pan and bake at 350 for 45 minutes. I would check with a toothpick at 35 minutes as everyone's oven is different. Transfer to a serving dish, allow to fully cool then frost with icing.
  2. For the frosting, cream together the butter and cream cheese until smooth. Add in the icing sugar, mix until creamy, add in milk, if you want it thinner add a little more milk.
