Chopped Collard Wrap

Aside from the occasional B4D (breakfast for dinner, obviously), I believe that every food has its meal and that every meal has its place in time.

Sandwiches, for instance, are the epitome of lunch.

It’s the ease of the sandwich that has caused it to become so firmly positioned in the middle of our days. Your mom could quickly spread some peanut butter and jelly between two slices of white bread before sending you on your way to fourth grade. And it’s this same slapdash technique that I (and many of you, I assume) use to throw together many of my weekday lunches, as well.

So, yeah, sandwiches are great. But one simply cannot overlook the allure of a wrap. And if said wrap is something slender and green like a collard leaf? Don’t even get me started!

Today’s recipe is a great way to simultaneously celebrate the sandwich/wrap staple while also spicing up your afternoon routine.

Chopped Collard Wrap

ingredients:

2-3 ounces deli turkey, chopped

1/4 cup each chopped veggies of choice

1 tablespoon hummus

1 tablespoon balsamic vinegar

2 tablespoons reduced fat feta

2 collard green leaves

directions:

1. In a small bowl, combine the chopped turkey, vegetables, hummus, balsamic, and feta.

2. Evenly distribute the turkey and veg mix between the two collard leaves, placing the mix along the spine of the collard leaf, leaving an inch or two free at the top of the wrap (at the opposite end of where the spine begins).

3. Fold the free end of the leaf down, fold in the two sides, and then place fold-side down.
