Couscous & Welcome, Samson! {Gastpost bei Mama, Daddy & Little Fox}

Heute bin ich bei der lieben Jackie von Mama, Daddy & Little Fox zu Gast und habe ein leckeres Couscous-Rezept im Gepäck. Ich glaube, Jackie kann ein einfaches, schnelles Rezept gerade gut brauchen – vor wenigen Tagen hat sie nämlich den süßen Samson zur Welt gebracht, der das Leben ihrer wunderbaren Familie sicherlich erstmal ein wenig auf den Kopf stellen wird.

This couscous recipe is super simple and doesn’t take a long time to prepare… as I’m sure Jackie will want to spend every single minute staring at her sweet little baby.

• 250g couscous
• 300ml water
• 1 tbsp butter
• 2 tbsp vegetable stock powder
• 1 zucchini
• 150g peas (frozen)
• 150g beans (frozen)
• a handful of cherry tomatoes
• spices to taste

Cut the zucchini and cherry tomatoes into small pieces.
In a saucepan, bring the water with the vegetable stock powder and butter to a boil. When it boils, take the saucepan off the stove, stir in the couscous and let it swell for a few minutes.
Meanwhile, roast the zucchini and the peas and the beans in a pan until they are al dente. Then add in the couscous and the tomatoes and warm it again.
Now just add some spice to your liking and you’re done! Enjoy!
