Healthy Summer Chicken Salad



It started as all good stories do, with a rotisserie chicken and the taste of summer in the air. With the craving for lighter meals and a need to mix up my salad repertoire. Saying see ya to spinach leaves and HELLO to Greek yoghurt and grapes. This is actually what goes down inside my head, it's all Greek yoghurt ahoy and we're off!
I feel like summer is getting dangerously close. The weather keeps teasing us with bursts of sun and then downpours of rain, but I'm staying optimistic. I know that gorgeous sunny weather is just around the corner and is just waiting to turn my milk bottle skin brown. I CAN FEEL IT! CAN YOU FEEL IT?!



Moving on from the Jacksons, this is one of the easiest recipes that has ever appeared on my blog, ever. The only skills required are slicing and mixing. You simply cannot go wrong with this one. And if you haven't got all of these ingredients kicking around, sub in what you have. No raisins? Go go go dried cranberries. Out of pistachios? Say hello to almonds. Mix it up and customise to your own taste. It's hella fun. You can also make a big load of this wonderful salad and live off it for the week, rendering any further cooking unnecessary. Winning for busy summer bees. It's going to be the easiest, healthiest and tastiest week of the year so far. I can feel the excitement brewing. You all need to get on board because I don't know if I will be able to shake this summer feeling off.
Shall we mix this salad up before I lose control completely? I think we should.

For Healthy Summer Chicken Salad you will need (serves 4-6):

breast meat of a medium rotisserie chicken
3 handfuls grapes
1 handful raisins
1/2 red onion
1 green apple
100g pistachios
6 heaped tbsp greek yoghurt
juice 1/2 lemon
salt and pepper

Say hello to your chicken. Remove the skin and shred the breast meat into a large bowl. The legs will make a great addition to a lunch box or can be part of another meal in your week.


Finely chop half a red onion and chuck into the bowl.


Core and dice the green apple then into the bowl it goes.


Slice your grapes in half and pop them in the large bowl too.


Shell and chop your pistachios and then guess what? Send them to the bowl.


Add in the Greek yoghurt, lemon juice, salt and pepper.
COLOUR IN A BOWL.


Mix.


And you're done! How easy was that?


Pile onto bread, stick into a wrap, stir through pasta or even just scoop it out of the bowl. You're going to love it, so easy and so fresh.
