Browned Butter Peanut Butter Rice Krispie Treats & Cosmo!



Well that's one heck of a long title isn't it?
BUT IT'S WORTH IT, GUYS. Because these are the bomb diggity. When I saw the Cosmo Blog Awards were open for nominations again I thought I'd put up another celebratory blog post and make it a little tradition at LLK (if you're interested in amazing cookies and my favourite blogs from last year then you can check last years post here). After all, there are so many incredible bloggers out there that deserve recognition for their beautiful corners of the internet. So yes, these Rice Krispie Treats are the perfect thing to celebrate the blogosphere. Also this recipe is one of the wonderful Joy the Baker's from her first book. An incredible blogger who blogs, podcasts, writes cookbooks and is generally SUPER. A recipe of hers is super appropriate to celebrate blogging talent.
Anyway Rice Krispie Treats are one of my favourite things. They remind me of my childhood as my Nan used to make my sister and I the occasional batch. We went wild for them. I feel that adding browned butter and peanut butter makes them grown up and sophisticated (maybe??). And I'll totally be scoffing them over the latest issue of Cosmo. Dream!

Handbags and Cupcakes:
Rachel is one of my lovely blogger friends. She was highly commended for Best Lifestyle blog at the Cosmo Blog Awards last year but she totally deserves to win the category this year! She is leading a pretty darn exciting life (currently interning with the BBC in Brussels - JEL!) and her posts are always fascinating, funny and friendly to read. You should also follow her on twitter, her feed is full of interesting articles and hilarity. So get your butt over there sharpish.

Tiny Paint Pot:
Another gorgeous blog! Sam is my guide to the world of beauty. I'm beyond rubbish with hair and makeup and Sam's blog is full of helpful tips and reviews. Tiny Paint Pot is also bursting with adorable lifestyle posts, including some illustrated ones - how talented is this girl?! She also has a variety of animals in her life, I mean what's not to love? Sam's instagram feed is also full of beautiful photos. Definitely give it a follow!

There are so many more that I love to read but these are some particular favourites at the moment.

So for Browned Butter and Peanut Butter Krispie Treats you will need (makes 12 large pieces):

115g unsalted butter
125g smooth peanut butter
180g Rice Krispies
285g marshmallows
1/4 tsp salt

Begin by buttering a brownie pan and set it aside.
Then put a large heavy-bottomed saucepan on a medium heat and melt the butter until just browned.


Butter will foam and froth before little brown bits begin to form on the bottom. As they do, start to whisk the butter.


Then get ready to add the marshmallows!


Just as the butter starts to brown add them in along with the peanut butter and salt.


STIR!


Keep stirring with a spatula or wooden spoon until you have a silky smooth mixture that looks good enough to swim in.


Say hello to ALL the Rice Krispies.


Then take the marshmallow mixture off the heat and pop them in.


Stir quick until all of the rice krispies are coated in the sticky marshmallow mix.


Turn the mixture into your prepared tin and press down into the corners. Leave for at least 30 minutes to cool down and then slice into 12 hunks of marshmallowy, peanut buttery goodness.


See, hunks of marshmallowy, peanut buttery goodness.
AH. I die.


Because it's a Joy the Baker recipe you just HAVE to stack them.
Shortly after they all toppled over. But... 3 second rule.


Wrap individually in clingfilm and store at room temperature for up to four days. AS IF they're going to stick around for that long.
