What I Ate Wednesday #191

I frantically started getting this post together only to realize it was Monday. Uh…. whoops. But it’s finally Wednesday and time for me to reflect on a yummy day of face stuffage!

One tiny catch… pretend my breakfast is present in the line-up! I’ve been waking up at ungodly hours and scarfing it in the dark, barefoot, standing in the kitchen like an animal. It’s been the same every morning lately: muesli cereal with almond milk and a banana, or a bagel with cream cheese and a banana. I think it has something to do with the fact that my dinners have hit early bird proportions. Thanks to my uber early brekkie, lunch is super early, and dinner is (spoiler alert!) also freaking early. I’m talking 5-6 pm early. I basically eat when Mia eats, which is screwing up my internal foodie clock and circadian rhythm and basically, throwing me off my game. The only bonus is that sometimes when I wake up at the butt-crack of dawn, I get a quick skype session with the husband before he goes to bed. It’s glorious! Even better is when he manages to stay up just a wee bit later and say good morning to the chickpea. My heart basically bursts into 1000 pieces and I want all. the. babies. Then I quickly come to my senses as my toddler (what!? baby! she's still my baby!) attempts to scale my hair like I’m Rapunzel. Ouch kid, ouch.

How on earth did we get on the subject of babies? Breakfast! We were talking about breakfast! It’s a chore keeping my crazy brain on task lately. Let’s move on to lunch:

I satisfied my craving for all things cheesy by making a plate of sweet potato nachos! I’ve blogged my yummy recipe for them before, but essentially you’ll want to roast, bake, or boil your sweet potato discs and load them with all your favorite nacho toppings. I used grass-fed pasture raised moo cow seasoned with a little bit of cumin, chili powder, garlic, and cayenne along with sweet mini peppers, green onion, and a dollop of greek yogurt. Oh and cheese. So much cheese.

Dinner was equally as cheesy… oops.

annnnd dessert:

It’s a bit blurry because I was too preoccupied with getting this bad boy into my face! I’ve been beyond famished lately and taking full advantage of the fact that I can finally eat without being in crazy ridiculous abdominal pain. Hence the cheese and ice cream palooza =) Delish!

I’ve also been catching up on my draft folder which is filled with entirely too many secret recipes that I need to get on this blog before I explode from excitement. Stay tuned.
