Chicken Supreme Pasta Bake

This easy, cheesy pasta bake comes together in no time when you combine the toppings from a chicken supreme pizza with pasta and cheese. This Chicken Supreme Pasta Bake is definitely comfort food to the max.

My goal to start making more dinners is going pretty well. I have been trying to experiment more with savory foods along with all the sweets each week.

So far, so good. I have this one and one other dish ready to share with you. Both meals were given thumbs up by my little taste testers.

Let’s talk comfort food for a minute.

Do you have a certain food group that you just absolutely love? I’m not talking dessert here For me, that would have to be pasta. 9 times out of 10 I will choose a pasta dish when we go out to eat.

Although, I have been branching out lately and ordering different things. It really is true that the older you get, the more your tastes buds change. Or grow up…depends how you look at it

One other meal that is total comfort food in our house is pizza. We usually have pizza at least once a week…sometimes more. Homemade, store bought, pizza shop…we pretty much enjoy them all.

So I combined the two comfort foods into one amazing dinner.

Chicken Supreme Pizza is one of my favorites, so I knew I wanted to incorporate those toppings into a delicious pasta bake. This pasta dish starts on the stove top and can be eaten in 30 minutes. But…let’s be honest…topping it with more cheese and baking it into a melty, ooey, gooey pasta bake is so much better. More cheese always get our vote!

This dinner comes together pretty quickly if you prep your ingredients ahead of time. I like to chop my chicken and vegetables early in the day and keep them in containers in the refrigerator. You could also cook your pasta ahead of time and keep it refrigerated. Make sure you toss the cooked pasta with a little bit of oil if you do cook it ahead of time.

When it is time to start dinner, you will be ahead of the game because you have all the prep work done. Just toss the chopped veggies in a skillet with some butter and saute for 2 minutes. Then sprinkle with some flour and cook 2-3 more minutes. That flour is going to cook into the butter and create a roux that will thicken up the chicken broth. It may be a little clumpy and thick at first, but be patient. It will cook down.

Whisk in the chicken broth and stir until it thickens slightly. Now you can add the yogurt and cheese and let it get all melty and wonderful. This dish is full of dairy and proteins. All that dairy gives you your vitamins and helps strengthen your bones. It’s a great way to make sure your kids (and you) are getting your dairy requirements.

If you need dinner in 30 minutes, this skillet dish is perfect. You can eat it as soon as you melt all the cheese into your roux. Just stir in the cooked pasta, tomatoes, and cooked chicken and dinner is ready.

BUT…if you have an extra 20 minutes, I suggest putting the pasta into a baking dish and topping it with more cheese. This dish was met with rave reviews from my kids. They loved that this had so much melted cheese on top and inside.

They didn’t even realize that I had slipped mushrooms into their dinner. Haha! Gotta love it when I can slide that one past them. I’m thinking more cheesy pasta with hidden veggies is happening again.

Print Chicken Supreme Pasta Bake

Prep Time: 30 minutes

Cook Time: 20 minutes

Yield: 8 servings

Turning a favorite pizza into a pasta bake is easy to do in minutes. Chicken, cheese, and pizza toppings is a favorite meal in our house. It's sure to become a favorite in yours.

Ingredients

16 ounces pasta, cooked al dente 2 cups grilled chicken, cubed 1/2 cup chopped onion 1/2 cup diced green pepper 1/2 cup diced mushrooms 1 teaspoon minced garlic 3 Tablespoons butter 3 Tablespoons flour 2 cups chicken stock 1 cup plain greek yogurt 1 1/2 cups shredded cheddar cheese 1 1/2 cups shredded mozzarella cheese 1 - 14.5 ounce can diced tomatoes salt and pepper oregano

Instructions

  1. Place the onion, green pepper, mushrooms, garlic and butter in a skillet and saute for 2 minutes. Stir in the flour and cook for another 2-3 minutes. Whisk in the chicken stock. Stir until the broth thickens slightly.
  2. Whisk in the yogurt. Add 1 cup cheddar cheese and 1 cup mozzarella cheese and stir until melted. Stir in the cooked pasta, chicken, and can of tomatoes. Season to taste with salt and pepper.
  3. Spoon the pasta into a greased 9x13 baking dish. Top with the remaining cheese and sprinkle with oregano. Bake at 350 degrees for 20-25 minutes, or until cheese is melted and browning. Serve hot. Makes 8 servings.

Notes

*This can also be made into a freezer meal. Place the skillet dinner into a glass freezer container and top with the remaining cheese and oregano. Freeze 2-3 months. Thaw overnight in the refrigerator. Bake according to directions.
