I turned almost 30 about a month ago, a few weeks before Christmas. Yep, I’m one of the lucky ones that has a birthday muddled between Thanksgiving and Christmas. Fortunately, I rarely fall victim to the “This is your Birthday ANNND Christmas present” scheme. I have pretty awesome parents and Scott clearly knows better. I like presents. Don’t rip me off.
For months I asked begged Scott for a Treadmill.
I imagined my birthday morning in my head over and over. I pictured myself waking up to a fancy breakfast in bed then crawling out of bed with my mimosa in hand to find a beautiful running machine sparkling in the light, just crying for me to take a few steps on its new belt.
None of that happened. It went a little closer to this…I woke up, breathed my birthday morning breath on Scott to get him up and at em. I stayed in my warm bed and he made us coffee. I didn’t even need the caffeine because I was so pumped to get my new treadmill.
He asked me if I was ready for my presents… I was barely able to hold it together. “Yes! Yes! Let’s open my presents!”
He carried them in, one by one, box after box. First a Dutch oven, then a pressure cooker, a waffle iron, some Pyrex dishes with carrying cases and a Cuisinart Food Processor. No treadmill… but plenty of items off my 2012 Christmas Gift Wish List on Pinterest.
I laughed, and made a joke about my missing treadmill. He responded with “Are you kidding me!?! If I bought you a treadmill for your birthday you would have told EVERY ONE of your friends ‘Scott thinks I’m Fat, he bought me a treadmill for my birthday’ I know better than that.” Smart man that Scott is. And I’m giving him mad props for actually finding my Pinterest and figuring out how to navigate his way through it! So thoughtful and resourceful.
{Just throwing it out there, my new treadmill will be delivered and installed tomorrow and I’m so pumped to take a nice long run!} Persistence pays off ladies
So back to my gifts.
As soon as I saw the food processor I knew I had to make a pesto. Pesto is a fave on my list of yummies, it’s so versatile. You can do so much with it and it always makes anything just a pinch better with the pop of flavor it adds. Plus making it homeamde, you know exactly whats going into your food. It’s fresh it’s fast and it’s fan-tast-a-fricken-licious.
So stay tuned because there really is a method to my madness and I will be adding new recipes using this delicious, simple, easy, tomato-ey, tangy spread. You’re not going to want to miss ‘em.
INGREDIENTS:
2- 3.5 oz. Bags of Roland Sun-Dried Tomatoes {I liked these because they aren’t packed in oil and are ready to use}
30 Large Fresh Leaves of Basil
¼ C. Pine Nuts
1 Cup Fresh Shredded Parmesan Cheese
2 Tbsp. Fresh Lemon Juice
3-4 Extra Large Cloves of Garlic { I’d
say this equals about 6-9 regular sized garlic cloves}
¾ C. Extra Virgin Olive Oil
1 tsp. Coarse Kosher Salt
3 Tbsp. Fresh Oregano Leaves
HOW-TO’S:
In a large food processor combine tomatoes, basil, oregano, garlic, salt, pine nuts and cheese.
Squeeze in 2 Tbsp. of Fresh Lemon Juice. Squeeze it from a lemon, that pre-squeezed stuff is just nasty and this is meant to taste fresh. You’ll be glad you did. Besides lemons are dang cheap. Buy a few.
Once everything is a nice pesto consistency stop the blade from spinnin and check it out. What I really mean is take a spoon and dig in, go ahead, I’ll wait… Its so good isn’t it??
It works out to be about 1 Point Per TBSP. Recipe makes 2 Cups about 16 Servings.
