Baked Apples Stuffed with Oatmeal Cookie Granola

I found fall…

…and I found it in baked apples topped with crumbly oatmeal cookie granola and maple cream cheese frosting<3.

It started raining outside while I was eating these and I was so cozy eating my cinnamon baked apple that I almost (almost) forgot it was 90 degrees outside.

So baked apples, I never really liked applesauce growing up. I remember people used to bring those applesauce cups to lunch and I’d be thinking “ewww.” But when I baked these apples, they pretty much turned into applesauce. And I like applesauce like this. I do. And I like applesauce in cookie dough cake batter sauce. I do.

How fun would it to be to have a fall party with a baked apple bar?!! Like you could halve the apples, scoop out the core, bake them until soft and then have toppings galore set out: nuts, oatmeal cookie granola, dark chocolate chunks, vanilla ice cream, maple cream cheese frosting, pumpkin brownie bites, and anything else you can think of that is fall-like and delicious. And then we would carve pumpkins and drink apple cider margaritas. Party or no party, I’m so making those margaritas. Me, myself and I will enjoy them. I have no doubt. Because if there’s gonna be booze, tequila is my addition of choice.

Okay now. This oatmeal cookie granola filling tastes just like oatmeal cookies. I think I’m going to make an even bigger batch of it so I can top my life with it. It would do wonders to smoothies, greek yogurt or pancakes. Ohhh or just served with some milk poured over it. Yes, a batch of cookie granola is in my not so distant future. I think all froyo places should have oatmeal cookie granola offered as a topping. I would support that wholeheartedly.

Without my husband I would eat way too much frozen yogurt. He’s like the keeper of frozen yogurt dates, so that way they only happen at maximum once a week. My grandma is a self proclaimed sweet-a-holic. She says my grandpa would do the same for her as Andrew does for me. As she was sneaking back to the kitchen for another bowl of ice cream he’d lovingly say, “Oh Ethelyn.” And she would realize she really didn’t really need another scoop. Oh husbands, helping us watch our figures. With Andrew it’s much less about my figure and much more about sticking to a budget.

Speaking of budgets and things that are healthy for you, I just counted up the number of burpees I did this week…215. Two hundred and fifteen burpees. For me, thats a whole bunch! They were interspersed among four workouts..80 burpess, 60 burpees, 45 burpees, 30 burpees. I can’t remember where I found the 45 burpee workout, but it was just 21-15-9 reps for 3 different exercises (21 burpees, 21 wall ball squats, 21 ab leg lifts. Then 15 burpees, 15 wall balls, etc…).

In other life things, I just spent the last hour doing a massive closet purge. I have so many clothes that I love and adore but they have really just passed their prime. Holes and stains and just worn out. It’s hard to part with them, but it is nice to have all of my clothes fit in my drawers and closet without them covering the floor of my closet. I did not part with this American Eagle sweater I’ve had for like 7 years. I can’t remember that last time I shopped at an American Eagle. It was probably 7 years ago. Then there were a lot of clothes that I was like, “If I loose 8 lbs this will fit perfectly.” But I don’t want to loose 8 lbs, so those clothes went to the Goodwill pile.

Andrew did a mini closet cleanout. Unfortunately his army green cargo shorts that I can’t stand didn’t make it into the pile. He probably go those when I got my American Eagle sweater 7 years ago. Maybe I should throw away that sweater.

Right now Andrew is reading Gone Girl. He’s been reading it ALL DAY LONG. I finished it a couple weeks ago and I’m hoping he finishes it by Thursday so we can go see the movie. I liked the book. Just the right level of creepy for me. I still can’t handle creepy Halloween movie previews that keep coming on the TV. Every time one comes on I slam my eyes shut, cover my ears and sing as loud as I can until it passes. Every single time. I like Halloween, but not the haunted houses or scary movie part. I went to a haunted house one time and I seriously could not move because I was so paralyzed by fear. It’s like that dream you have when something bad is happening and you can’t move…but this was real life. HATED IT. NEVER EVER EVER AGAIN will I be caught anywhere near a haunted house.

Luckily fall doesn’t just mean haunted houses. It also means baked apples stuffed with oatmeal cookie granola. Sometimes I am so sure that there is nothing greater than the combination of oatmeal and brown sugar.

Baked Apples Stuffed with Oatmeal Cookie Granola 2014-10-12 20:29:41

Baked Apples
  1. 2 apples
  2. 1/2 cup walnuts, finely chopped almost into a flour
  3. 1/4 cup oat flour, packed
  4. 1/4 cup old-fashioned oats
  5. 2 tablespoons brown sugar
  6. 2 tablespoons butter, melted
  7. 1 tablespoon maple syrup
  8. 1 teaspoon cinnamon
  9. 1/4 teaspoon salt

Maple Cream Cheese Frosting
  1. 3 tablespoons plain 2% greek yogurt
  2. 2 tablespoons cream cheese
  3. 1 tablespoon maple syrup

Instructions
  1. Preheat oven to 350F. Cut apples in half and scoop out core and some of the flesh to make the apple into a little bowl. Bake for 45 minutes.
  2. While apples are baking, combine walnuts, oat flour, oats, brown sugar, butter, maple syrup, cinnamon and salt. Stir until a dough consistency forms. Divide evenly among apples. Return to oven for 15 minutes.
  3. Now make your maple cream cheese frosting. In a bowl, use an electric hand mixer to combine greek yogurt, cream cheese and maple syrup. Mix on high until smooth. Place in the fridge until the apples are ready to top.
  4. Serve apples warm topped with a scoop of maple cream cheese frosting (or a smidge of ice cream).
