Mini Snickerdoodle Muffins

Hi! It’s Chandra from The Plaid & Paisley Kitchen.

These little Mini Snickerdoodle Muffins are quite possibly the easiest and tastiest little bite that you will ever pop in your mouth!

I can’t take all the credit for these as they are a dressed up version that my mom used to make for us as kids. I added a few ingredients but the base recipe idea came from her.

I love snickerdoodle cookies. I love that little bite of tang that makes them so unique. For me it is not the cinnamon it’s the cream of tartar that gives them their flavor. Now I am not saying that I don’t like the cinnamon…… I just happen to really love cream of tartar. I don’t even really know what it is other than it makes baked goods tangy and it turns regular milk into buttermilk.

I love anything that is mini and cute and easy! These little are all of that. I think that these would be a fun treat at a Potluck and a fun little twist on cookies. Not that I don’t love every cookie ever made in the history of cookies, but you can be the one to bring a unique treat that no one was expecting!

I mean who wouldn’t want to just shove as many of these in your mouth that you can fit at one time? I think that we may have done just that! Hubby was like why did you have to make something that I want to eat all of them for?

Well that is my job isn’t it?

Oh and that really cool sugar that the muffins are sitting on? Well that is organic coarse sugar. I can guarantee you that you will be seeing a lot of this over the next few Months. It’s just so pretty and photogenic!

I am really excited to get into my Spring Baking. I have a list a mile long that I want to create for you!

Print Mini Snickerdoodle Muffins

Ingredients

  • 1 box yellow cake mix
  • 1 tsp cream of tartar
  • 1 tsp cinnamon
  • 1 cup water
  • 1/3 cup oil
  • 3 eggs
  • 1/4 cup sugar mixed with 1 tbsp cinnamon
  • 3 tbs melted butter

Instructions

  • preheat oven to 350
  • line mini muffin cup liners in the mini muffin pan
  • combine all the ingredients EXCEPT for the sugar cinnamon mixture and melted butter
  • fill the liners with approximately 1 tbs batter each
  • bake for 14 min
  • cool completely
  • brush tops with melted butter and then dip in the sugar cinnamon mixture
  • Enjoy!
