Castaway Spritz picnic & my perfect summer salad

I don’t know about you but the last of the warm days have me ‘summering’ like a crazy lady (what if it just doesn’t come next year?). Every opportunity to eat and drink alfresco I am taking and I will be wearing cutoffs and the most summery lace I can lay my hands on.

My friends over at Castaway Spritz joined the picnic party and, I have to tell you, summer in a bottle right there. I bought those jam jar mugs that people only really use on instagram, topped them with a sliced strawberry and filled them right up with sparkly, fruity goodness. But it would be all kinds of wrong not to eat and I have that sorted too – scroll right down to see the recipe for, and I’ll go out on a limb here, my perfect summer salad…

Perfect Summer Salad (serves 2)

1 ripe nectarine
1 ball mozzarella
4 slices parma ham
A couple of handfuls of lambs lettuce
A drizzle of honey balsamic glaze

Directions

Chop the nectarines, tear the ham and mozzarella, toss with the lambs lettuce and drizzle with honey balsamic glaze (1 part honey, 10 parts balsamic reduced by half over a low heat and cooled – I store mine in a pouring jar for later).

Serve in cute boxes with something cool, fruity and bubbly – like Castaway Spritz! Enjoy.x
