Late Summer Avocado and Pita Fattoush Salad

If you ask my brother, he’ll tell you – the simple fact is that Fattoush salad is pretty much Gemmayz-ing.

Okay, wait, that’s an inside joke that needs some explanation. When we went to visit in-laws in Lebanon a few years ago, we were on a mission to try as much new food as possible but, equally important to me, I wanted to find the best fattoush in all the land. I first was drawn to fattoush because, well, it’s just an awesome word to say. But I was hooked because it’s a salad loaded with summer veggies and topped with crisp, crunchy pita chips — and you know how much I like crispy, crunchy on any and everything.

Anyway, after two weeks of trying and tasting, we declared the most amazing salad we had in all the land to be at Tawlet in the Gemmayzeh area of Beirut. Because we speak absolutely no Arabic, when our brother-in-law told us the name of the neighborhood we took it to be “amazing” and just ran with it. Which is why this amazing salad that we tried in that hood has been coined Gemmayz-ing.

You don’t need to get its origin but you should run with it as a term. While touting some of this salad along with you. Because as summer winds down, we want to be selfish and get as many summer tomatoes as possible. And avocados, and cucumbers. And this version of Fattoush Salad has ‘em all. See? Like I said, totally gemmayz-ing.
