Date Night Kale Salad (vegan)

With Valentine’s Day coming up this week, I just had to make some kind of dish with dates. I love puns too much to pass up on this opportunity. A couple of weeks ago I took a work trip to Nashville, where I had a kale salad that I have been completely obsessed with ever since. I love kale, but since it is one of the few things that is fresh, organic, and beautiful in the middle of winter.. I have had my fair share of kale this year. I think I have made Kale and Lentil Soup almost once a week. So I was really excited to have this new breath of kale salad obsession. I guess you could say I fell in love with kale all over again.. (please forgive me for being such a cheeseball!) What I really love about this salad is that it sticks with pretty normal ingredients, but together the flavor is so good!! And I am really loving finely chopped kale for salads. I think it makes the flavor a little more mild, and what is so great for date night is that you can make this in advance, it won’t get soggy.
