Vegan Sauteed Mushrooms and Scallions


I started feeling like Spring may be actually coming this weekend. We moved the clocks forward and I am so excited for the extra daylight!! And we even had a couple of sunny days. I was so convinced that it was almost spring time, that I dragged my family over to a park with their adorable (but so well behaved they are kind of weird) puppies. In my head it was a big green field and the puppies were going to be able to run free. But when we pulled into the park I remembered that there is still lots of snow everywhere. Does it being Spring in my brain still count as it being spring? If so we are there guys. So in the name of smooth transitions (which I am a pro at in a parallel universe somewhere, I am sure) lets use some spring onions?
