I first swooned this salad years ago at Franny’s. I remember thinking, what an odd flavor combination – salty olives coupled with tart & sweet citrus? But my initial bite resulted in an absolute explosion of bright & delicious flavors.
Since then I have snooped an iteration of a citrus salad on menus at some of my favorite local jaunts. Is citrus the new kale? Well for winter, I imagine it is! We don’t have many options for clean and bright flavors in winter – especially set against the back drop of the heartier dishes we crave when its so brutally cold. Refreshing in every bite – playing upon sweet, tart & briny flavors which awaken your palette in the very best way. And the vibrant colors – I mean if there were ever a plate of food to makes you swoon visually – this would be it!
I just love a salad that can be assembled and dressed directly on the plate – packing a punch with beauty, flavor & texture! You can also allow this recipe to evolve – substitute any variety of winter citrus you find at the market or add endive or arugula for versatility.
