summer zucchini “pasta” salad

This post could also be called “yay! finally a recipe!”, but I decided to stick with the recipe name. I made this yummy salad last week and finally had enough time to snap some pictures as I was cooking. I love making a pasta salad in the summer months using fresh raw corn and heirloom tomatos. I decided to make it, but instead of pasta I used a vegetable peeler to thinly slice a zucchini and used that instead. It was delicious, fresh, and super healthy! Recipe is below. Ingredients for the salad: fresh corn, yellow and green squash, heirloom tomatos, shredded carrots, and feta cheese.

Make a light dressing for the salad using mustard, honey, lemon juice and zest, olive oil, salt and pepper.

Using a vegetable peeler thinly slice the zucchini into strips. Place strips into a strainer and allow it to drain for 30 minutes.

Combine all your ingredients in a bowl, serve, and enjoy!
