Recipe Rave Review: Black Bean Burrito Bake



I am always on the hunt for quick and easy recipes to try on my TH. Knowing I am going to be a super busy mommy with two babies quite soon here , I decided there was no better time to get started then now. So, I went to my Cooking Light recipe book and pulled out a Mexican dish (our favorite) and gave it a go. I checked what I already had and then headed to the store to gather the rest of my ingredients.


Ingredients:
  • 3 chiles from a 7 oz can chipotle chilies in adobo sauce
  • 1/2 cup reduced fat sour cream
  • 1 (15 oz) can black beans, rinsed, drained and divided
  • 1 cup whole kernel fresh or frozen corn
  • 4 (8 in) flour tortillas
  • 1 cup salsa
  • 1/2 cup shredded Monterrey Jack cheese
Before I got things moving and shaking, I preheated the oven to 350. Next, I chopped up the chiles and mixed them with the sour cream and let it stand while I moved on to the next step.


I then took one half of the beans and chopped them up nice and tiny.


Once chopped, I added them as well as the whole beans and corn to the sour cream mixture.


Once it was all mixed together, I took my delish uncooked tortillas and heated those guys right up in my skillet.


Once cooked to perfection, I spooned up some bean mixture and placed it down the center of each tortilla....one by one.


Once spooned and spread, it was time to roll up that sassy little tortilla.


Next up, I placed the rolled tortilla (seam sides down) in an 11x7 baking dish; I made sure the pan was coated with cooking spray first of course...


When rolled and ready, it's take your homemade TH salsa (the only kind to have on hand of course), and spread that spicy salsa alllllll over those tortillas.


With the salsa seeping down between each roll, it is time to load on the cheese.


Now, it is time to bake!!! Cover the pan with foil and cook at 350 degrees for 20 minutes or until thoroughly heated (hot in the center is how I checked).


Oooooohhhhh yeah. Now, that is what I like to see. Let those puppies cool, cut a nice little burrito out of the pan and enjoy!! It got the "mmmmmmmmhhmmmm" of approval from my TH so I know I'll keep this recipe handy for our future (with two babies to attend to) dinners. It was quick and easy; just how I like my dinners.
