Cheeseburger Rotel Dip with Velveeta Cheese Sauce


The Super Bowl is just around the bend which means you will be, or all ready are, flooded with a million ragged Rotel Dip recipes.

Yes, I said it!

Everybody’s Auntie and ‘em think they have the best Rotel Cheese Dip recipe known to man, and every Super Bowl someone thinks they know how to make Rotel Dip that will make everyone go crazy. However on behalf of all those who think they have the best Rotel Dip recipe, but really don’t, I say to them for you, “You tried it!”

I mean here is the thing, Rotel Dip is super easy to make, but sadly most people screw it up. It’s either watery, chalky, flavorless, or down right bad.

A crowd pleasing Rotel Dip, Queso Dip, Velveeta Cheese Dip, or Taco Dip Recipe (depending on what you call it in your home) depends on more than adding Velveeta Cheese and Rotel to a pot and stirring.

No, ma’mn or sir. There is more to it than that. You have to put a bit of love, spice, and your foot in the pot.

Kidding on that foot part. Please don’t do that.

However, if you make my Cheeseburger Rotel Dip with Velveeta Cheese Sauce, best believe once your friends and family dip a chip into this Rotel Dip, someone will say, “You put your foot in that!”

If you need a vegetarian Super Bowl snack recipe you can still make this easy Rotel Cheese Dip recipe by omitting the meat, but don’t skip on the spices. Also, don’t forget to serve it with a vegetarian pizza.

Ingredients
  1. 1 can (10 oz each) Mild RoTel Diced Tomatoes & Green Chilies, undrained
  2. 1/2 pkg (16 oz each) Velveeta
  3. 1 cup of Mexican Style Cheese, shredded
  4. 1 pound Ground Beef
  5. 1/4 t. Chili Powder
  6. 1/4 t. Sazon Tropical Seasoning
  7. 1/4 t. Black Pepper
  8. Pinch of Adobo Seasoning
  9. Green Onions

Instructions
  1. 1. Brown groundbeef with seadonings, until done.
  2. 2. Cut Velveeta into 1/2-inch cubes
  3. 3. Combine Rotel, Velveeta, and cheese in medium saucepan.
  4. 4. Cook cheese sauce over medium heat 5 minutes, or until Velveeta & cheese is melted completely and mixture is blended, stirring frequently.
  5. 5. Add ground beef to mixture.
  6. 6. Sprinkle green onions on top and serve with tortilla chips.

Notes
  1. I like my Rotel Dip on the spicy side, so you can play around with the seasonings to your liking.
