Key Lime Mousse Dessert



So, I still have a few dessert recipes to share from my dessert party – and all of them lend themselves well not only to single serving desserts, but also even to bite-sized desserts, like I put together for the party! You can make this key lime mousse dessert ahead of time for easy serving when you’re entertaining, which is a critical detail for me. Key lime pie is one of my all-time favorite desserts, but it tends to be a bit heavy – this mousse version is nice and light with all the flavor. And best of all, it’s no-bake – just a couple minutes on the stove and some whipping is all you need!

We juice our own limes for this recipe, and my daughter just LOVES to “help” – but you can use bottled key lime juice if it’s available. I haven’t looked hard enough to find it, and plus – it’s all part of the bonding time in the kitchen, right? Haha.

If you’re juicing your own, pick up at least an extra lime in case they’re extra small – and they look pretty as garnish, too so an extra won’t go to waste!

Key Lime Mousse Dessert

Ingredients
  • 1 c. crushed vanilla wafers (or grahams)
  • ¼ c. melted butter
  • 1 -15 oz. can sweetened condensed milk
  • Juice from 3 key limes (about ½ cup)
  • 1 tsp. Knox gelatine (1/2 an envelope)
  • 1 c. heavy whipping cream
  • 2 Tbsp. sugar

Instructions
  1. Add melted butter to crumbs, and sprinkle into the bottom of your pans or serving bowls. Tamp down with the bottom of a glass to form a crust.
  2. In a separate bowl, mix condensed milk and lime juice together.
  3. In a small saucepan, sprinkle gelatine over ¼ c. cream. Allow it to rest 1-2 minutes, then stir it well over low heat until the gelatine dissolves completely.
  4. Add sugar to the remaining cream, and beat until fluffy while you allow the saucepan mixture to cool.
  5. Slowly add the mixture from your saucepan to the whipped cream, mixing on low. Then, fold the lime mixture in as well until fully blended.
  6. Spoon onto crust(s) and refrigerate for 2-3 hours. Top with whipped cream minutes prior to serving, and optionally, garnish with lime zest and/or lime slices.
