Vegetarian Thanksgiving Meal Ideas

We may not celebrate Thanksgiving in Australia, but I sure do use it as an excuse to make copious amounts of macaroni and cheese with hefty doses of pumpkin pie chaser. I only ever make pumpkin pie once a year, but hot DAMN is it good. I was so, so skeptical, and then I quickly became a disciple, paying homage to this chameleon vegetable each year in November. But AFTER I get that mac and cheese straight down my gullet.

We’ve done a few things for the Thanksgiving meals over the years, but I think this year will finally be the one we bust out a Tofurkey. After nine years of being vegetarian in this country, this intriguing option has at last made its way to our shores. I owe it to my curious 2005 self to give it a go.

If you’re looking for non-fake-turkey options, here’s how we’ve had vegetarian Thanksgiving dinners:

Paula Deen’s Macaroni and Cheese

This Mac and Cheese (minus the sundried tomatoes) will be making an appearance this year (late, because I’ll be away on the day. But mac and cheese, y’know?)

Vegetarian Stuffed Pumpkin

Paula Deen’s Southern Cornbread Stuffing (with veg substitutions for stock, etc. Be warned it makes a TON)

Homemade gravy (really good if you make it from the pan you roasted your vegetables in – don’t forget the rosemary!)
