Applesauce Protein Waffles with Coconut Whipped Cream

Today we bring you a waffle flavored with one my boyfriend’s most favorite things in the whole world- COCONUTS!

For me, I only like coconut shrimp & coconut shreds on my pina colada. Besides that, no thanks! I know, I am weird. Because most people love coconut! Coconut water is a trendy drink option these days. And Samoa girl scout cookies are never passed up. So there must be something about coconuts that is attractive to the taste buds.

Therefore, we put together this recipe using vanilla whey protein, applesauce, and coconut oil as the main ingredients.

Then we topped it with some Fat-free Reddy Whip, coconut shreds, & pineapple for a Caribbean flare!

Applesauce Protein Waffles with Coconut Whipped Cream

Ingredients
  • ⅜ cup original applesauce
  • 2 whole eggs
  • ½ tsp vanilla extract
  • 1 tbsp coconut oil
  • ½ cup tapioca flour
  • 1 scoop vanilla protein powder (we used Beverly International)
  • ½ tsp baking soda
  • ¼ tsp cinnamon
  • a pinch of salt

Instructions
  1. Whisk all ingredients together in a large bowl
  2. Cook in waffle iron until crispy
