Organic Dulce Vida Watermelon Margaritas

My dreams are made of somethin’ like this: I’m lounging on a sandy white beach in a cobalt blue bikini (obvs my abs are lookin’ killer). Behind me is a bubbling mountain made of green, creamy, spicy guacamole. If I so much as raise a finger, Channing Tatum comes over (his abs are nice too), with a plate of fresh guac and crispy veggie chips. In the distance I can hear the crashing of a waterfall; of course this is a special waterfall – it’s made of fresh fruit margarita nectar, perfectly cut limes and pink Himalayan salt. Channing Tatum brings those over, too. Everything is healthy, delicious, and calorie-free. So I eat all day and my abs stay intact (duh), until I get too hot and the crystal clear waters call my name. The waves gently crash up on the stark white shore and the temperature of the water is just perfect: a warm 82 degrees. I swim with dolphins and I never get bored.

I’m aware that this dream is completely ridiculous, but hey! someone’s gotta hang out with poor ol’ Channing.

Cinco de Mayo has been one of my favorite holidays since I first cut teeth to gnaw into a piece of oxtail with (I’m Colombian and my Colombian grandmother liked to keep me happy, ok?). My parents owned Mexican restaurants for the majority of my life, so the cuisine has always been a big part of my life. I crave the flavors of cilantro and spice, and when I turned 21, the first *legal* drink I had was a watermelon margarita. You know how much I love food – and sorry but Thanksgiving, Christmas, Easter and New Years combined can’t beat these flavors in my book. I’ll take tacos and tequila over pumpkin and poinsettia’s any day.

Ingredients:

Dulce Vida Tequila Blanco bottle
Organic agave nectar
Organic limes
Organic navel oranges
Organic watermelon, blended in high speed blender**
Sparkling lime water
Pink Himalayan salt
Ice

Margarita Makin’:

Each individual margarita gets 1 oz. tequila, 1 oz. fresh squeezed lime juice, 1/2 oz. agave, 1/4 oz. fresh squeezed orange juice, 1 oz. fresh watermelon juice, and a handful of ice. Place ingredients in shaker (I used a mason jar with a tight lid) and shake vigorously. Rim glass with salt, if desired. Pour over a little more ice, add a splash of sparkling lime water, serve and enjoy! Sluuuuurp!

This margarita is so smooth and delicious! I am a huge fan of white tequila and this Dulce Vida Blanco is incredible.

**You can replace this with any fresh juiced or blended fruit juice! We love mango, cucumber, strawberry and grapefruit.

Our Cinco de Mayo menu will be delicious and mostly paleo. I’m grilling up chicken and veggie fajitas, chili-rubbed pork and steak tacos (wrapped in lettuce wraps for me, and gluten-free corn tortillas for the familia), my famously delicious homemade guacamole with veggie chips, mango salsa, pico de gallo, Mexican beers and fresh fruit margaritas. We’re going to have a backyard party so no one has to drive and so everyone can be assured that their food is homemade, organic, and scrumptious. I kind of have a complex about eating out at a restaurant when I know I could prepare something just as tasty, and healthier.
