I’m not exaggerating when I say that this Clean Eating Sweet Potato Casserole is awesome!! It is one of my absolute favorite Thanksgiving dishes. Well, you know, this and stuffing, and cranberry sauce, and pecan pie. What can I say, I’m a sucker for yummy Thanksgiving food, but this sweet potato casserole is always a hit with my family and my in-laws! The original recipe is from thepioneerwoman.com, and I just did some editing to make it a cleaner and healthier dish. You and your family are absolutely going to love it!
One nice thing about this dish too, is that it can be prepped days in advance so it doesn’t add extra stress to your holiday. All you have to do is refrigerate the baking dish of sweet potato mix and the topping separately (I just put the topping in a big ziplock bag) and then add the topping right before you bake. So easy and so delicious!
