The King’s Waffled Peanut Butter and Banana Sliders


Sweet dinner rolls are split in half and slathered with creamy peanut butter before being topped with slices of banana to create The King’s Waffled Peanut Butter & Banana Sliders. (The preferred sandwich filling of Elvis!) These mini sandwiches are then popped into a waffle maker to make for a thinner, easier to handle sandwich that also warms the filling to create a decadent, protein packed lunch. #lunchboxfun

Today, our lazy days of Summer schedule just got a kick in the pants. So long, vacation. Hello, first day of school. Wah, wah. Although really, I’m the only one in the house with the feeling of dread. Both of the girls are beyond excited to be back and see their friends. And honestly, getting back onto a more strict schedule will do us all some good.

Well, except for one thing. Our school added 30 minutes to the prekindergarten day so instead of and hour and a half to get the younger two home, fed lunch and down for naps, I know have just an hour. I’m seeing a lot of getting creative for lunch ideas in my future. And perhaps some of those including bento lunches on the car ride home.

When King’s Hawaiian reached out to see if I’d be interested in creating a lunch idea with their amazing product, I couldn’t reply fast enough. You guys, I love King’s Hawaiian to the moon and back. As in, last winter during the insane rounds of polar vortex weather we experienced I’d add soup to our menu not only to warm us up but also because it provided the best excuse to have King’s Hawaiian rolls. Bites of heaven I tell you! Unfortunately, my family agrees to their awesomeness and a package never lasts long.

On occasion when we had a few leftover rolls I’d use them to make sandwiches for Leighton and Carson for a quick lunch. Of course, 9 times out of 10 they’d take out whatever filling I’d used and eat the roll first. Until now! I’ve created a lunch that’s perfect for any day of the week and especially those days where I’m on the clock to get lunch on the table quickly. My newly turned first grader just wishes she could take her lunch to school now so that she could enjoy them as well!

The King's Waffled Peanut Butter and Banana Sliders

Ingredients
  • 16 King's Hawaiian Sweet Dinner Rolls
  • 1 cup peanut butter
  • 3 bananas, sliced

Instructions
  1. Split each roll in half and spread the inside of both halves with peanut butter.
  2. Top with four slices of banana.
  3. Put halves of roll together to create sandwich and place in preheated waffle iron.
  4. Cook for 2-3 minutes or until lightly browned and warmed through.

Oh, okay, so I may have eaten one or three myself as well. I couldn’t resist!
