You Will Need:
Step One
Preheat the oven to 180C and lightly grease a baking tray with oil. This recipe calls for just the stem of the butternut, so slice off both ends until you only have the long part left. Peel and place on a chopping board.
Step Two
We’re going to make the pizza base with thin slices of butternut squash, so grab a sharp knife and carefully slice in to circles, around 5cm thick. You can go thicker or thinner (to make them more crispy) if you prefer.
Step Four
Bake the butternut in the oven for around 20 - 30 minutes, making sure to turn each slice around halfway through. They slices should begin to brown on either side. While the butternut is cooking, prepare your toppings - grate cheese, slice onion and ham, drain pineapple.
Step Five
Once done on both sides, take the tray out of the oven. Spoon on a small amount of the pasatta on to the top of the butternut squash, then add a sprinkle of cheese and your toppings. Finish off with a little more cheese and season with salt, black pepper and a touch of cayenne pepper if you wish.
Step Six
Place the tray back in the oven for five or ten minutes until the cheese is starting to brown and the toppings look cooked.
