Mini Cinnamon Apple Pancake Recipe



This mini pancake recipe will please anyone from big to small with it’s cinnamon and apple chunks. Eat them as is or turn them into a mini sandwich for a fun lunchtime treat!

Way back when my mom packed my lunches I could be sure my brown bag would have two things: a hard salami sandwich on rye and a red delicious apple. Sometimes she’d throw in Fig Newtons. I hated this lunch. I loved the salami, but that’s about it. The reason I got this lunch is because this is exactly what my mom packed my dad. I’ve never asked him, but I wonder if he hated it as much as I did?

Now that I am the main lunch packer of the family, I try very hard to vary lunches around here. But as much as I try to change things up, the kids try to keep it the same. My son could probably eat a peanut butter and jelly sandwich every day. My daughter could eat a turkey and mayo sandwich every day. Am I the only one who craves variety? Am I the only one that knows a varied diet is the best way to take in the vitamins the body needs?

Since all three of my kids love breakfast food, especially pancakes, I’m going to surprise them with these mini pancake sandwiches. The pancake recipe is loaded with cinnamon and fresh apples. A dab of peanut butter turns them into a sandwich I know the kids will love. With these mini pancake sandwiches, I know the kids are getting a homemade treat with an added serving of fruit along with some peanut butter for protein. The kids can get creative and fill them with jelly or Nutella or cookie butter. They can even eat them plain. The best part is, they can turn around and eat them for breakfast too!

Mini Cinnamon Apple Pancake Recipe

Ingredients

  • 1 ½ cups flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 teaspoon cinnamon
  • 1 ¼ cup milk
  • 1 egg
  • 3 tablespoons melted butter
  • ½ teaspoon vanilla
  • 1/3 cup finely diced apple (I used Fuji)
  • Filling of your choice.

Instructions

  1. In a bowl, combine flour, baking powder, salt, sugar and cinnamon. Make a well in the center of your dry ingredients and carefully mix in milk, eggs, butter, vanilla and apples.
  2. Heat a griddle pan or a skillet, spray with non stick spray or melt a dab of butter. Using a small cookie scoop, place silver dollor sized pancakes on hot griddle. Brown pancakes on each side, about 2-3 minutes per side.
  3. Let pancake cool. Spread about 1 teaspoon of peanut butter one side of a pancake, top with another pancake. Makes about 16 mini pancakes.
