Parmesan Ranch Dip with Tortellini



Parmesan Ranch Dip and cheese filled tortellini make a snacking good lunch!

When I was a kid the best thing about picking out school supplies was shopping for my new lunch box. My shiny, metal noisy lunch box with it’s matching thermos. I vividly remember my Dukes of Hazard lunch box (forget One Direction, Bo and Luke Duke were IT). Those were the days.

I loved pouring out my juice into the plastic thermos cup. I felt so sophisticated. Never mind that my lunch smelled tinny from the box or that my food was smashed because those boxes just weren’t that big. I was happy. I like to compartmentalize things, so these boxes were right up my organizing ally!

I can’t remember when lunch boxes fell out of fashion and brown bags became vogue. Sadly, my kids just aren’t as excited about their lunch containers as I was. I think the Bento Box could change all that. With their colorful compartments and matching lids, what kid wouldn’t want a Bento? I work from home, but I may have to start using a Bento Box for my own lunch. I’ll pack myself a little fruit, a few veggies, this tangy Parmesan ranch dip and a few tortellini. I will put the lids on each container, pack a Spork and dig in!

My own kids loving eating tortellini and Parmesan Ranch Dip for lunch. It’s easy, filling and since the ranch dip is made with Greek yogurt I know they are getting protein and calcium with each bite. The dip is perfect for veggies too! And if they want a change, swap out the Parmesan for taco seasoning or pesto and you have a whole new lunch!

Parmesan Ranch Dip with Tortellini

Ingredients

  • Parmesan Ranch
  • 1 cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 1/3 cup grated parmesan
  • Taco Ranch Dip
  • 1 cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 1 tablespoon ranch seasoning
  • 1 tablespoon taco seasoning
  • Pesto Ranch
  • 1 cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 1/3 cup jarred pesto

Instructions

  1. Mix all ingredients in a bowl and serve.
