Summer Berry Lemon Slush

I have a new addiction (I know—shocking that *I* would become addicted to something, right?).

The good news is—it’s the perfect addiction for summer, it’s fairly easy to make, and it’s much better for me than my three-a-day Diet Coke addiction (almost two months DC free, what?!?!?).

That addiction, my friends, is lemonade! I love lemon anything in the summer months, but nothing beat a tall, cool glass of the stuff. I’ve been drinking at least two or three glasses a day. (Told you, it’s an addiction.)

The other night while The Husband was grilling up some burgers for dinner, I was craving some lemonade, but I wanted something a little slushy, and something a little different than my every day glass of lemonade. I also had a mixed assortment of strawberries, blackberries, and blueberries from our local Farmer’s Market that were started to shrivel and I wanted to use up before they went bad.

The result was my Summertime Lemon Berry Slush recipe. It’s super easy to make, and you might already have most of the ingredients on hand.

Just mix together some mixed berries, Country Time Lemonade powder mix, water, and ice—and voila! A super slushy, super delicious summertime treat.

Ingredients:

  • 1 cup mixed berries (fresh or frozen—if frozen, use unsweetened berries)
  • 3 cups ice
  • 1 cup cold water
  • 2 scoops Country Time Lemonade Mix (powder)

Add berries, ice, water, and lemonade mix to blender. Process on high for 1-2 minutes. Adjust ice if necessary to make the mixture “slushier” if desired.

Optional: Depending on the sweetness/tartness of your berries, it may be necessary to add 1-2 tablespoons of sugar to offset the tartness of your berries. Stir thoroughly into mixture with a spoon.

Makes 2 servings.

I like to serve mine in a large mason jar, or a cute footed dessert bowl. I dressed mine up with a paper straw, and since I didn’t have any paper umbrellas, I punched holes in cupcake liners and turned them upside down!
