Spinach and Basil - Pesto 3 Cheese Pizza


My roommate and I eat a lot of pizza. There's just nothing better than some delicious cheesy goodness! As two ladies who are no longer in our junk food college phase, we really try to make healthier choices, even with our pizza!


I think we've perfected our dough recipe (sub half the flour for whole wheat and use half the yeast) but the topping possibilities are endless! Here is one of our favorites, but this recent attempt might just take the cake!

Ingredients:
-Pizza Dough
-1/2 cup shredded moth cheese
-1/2 cup shredded parmesan cheese
-1/4 cup shredded asiago cheese
-1 cup fresh spinach leaves
-Fresh basil leaves
-1/2 jar pesto sauce

Preheat oven to 475. Lightly oil cookie sheet (or pizza stone!) and smooth pizza dough until evenly dispersed on the tray. Combine all cheeses. Spread pesto sauce onto dough. I like to layer, so sprinkle 3/4 cheese across pesto, add spinach and basil, then top with remaining cheese. Bake 13-15 min.


We loved mixing it up and using pesto instead of red sauce. It's such a light flavor with the minimal toppings and delicious pesto. I want to try an alfredo pizza next, does anyone have a good recipe? Leave a comment if you have a great pizza recipe to try, I'm slowly becoming addicted!
