Ding, ding, ding. “There is no way it is morning already.” Those are the first words I think after hearing the morning alarm go off. I’m reaching to figure out where my phone is to turn it off. Oh make it stop now! Morning is not my cup of tea. In fact morning doesn’t even begin until I’ve had a cup of coffee. My brain does not function, and the thought of breakfast seems totally overwhelming. I need to be able to grab something right away. Otherwise, I stand in front of the refrigerator looking aimlessly, because I forgot what I was doing in the first place. Oh, right breakfast! Good thing I thought about it the night before. I’ve got Pumpkin Overnight Oats in there.
With one eye open, I can grab the bowl and mix the fixings for the yogurt mixture. If I’m feeling particularly lazy, I won’t even layer the parfait. I’ll just scoop the yogurt mixture and pecans on top. If I’m feeling like a little treat, I’ll layer this deliciously, healthy breakfast in a pretty bowl. Then I feel rather like a queen eating a gorgeous breakfast, which I made with one eye open and in less than 5 minutes.
Luckily for me, since this breakfast isn’t portable, my husband won’t touch it. It is all for me. If it was something he could grab and go, he would abscond with it for his breakfast leaving me so sad and blue. What better way is there to wake up, and start your day, then with all the flavors of pumpkin pie and a cup of coffee, of course? With a touch of two of my favorite pumpkin pie spices, cinnamon and nutmeg, the pumpkin puree and oats are transformed. The nuts provide a little crunch which is oh so satisfying.
