I’ve been in a little rut, when it comes to vegetables lately. I find that I always go the same thing. Cut the vegetables in chunks, toss with a little olive oil, salt and pepper. Roast. I was getting bored with it. Boredom is the kiss of death for my diet. Boredom leads to grabbing a bag of potato chips out of the pantry, and standing there eating the whole bag. Oh no! I’ve managed to get my act together, and don’t want to blow it now. It is time to break out of my vegetable rut. Time to make vegetables the Super Heros they are. All they need is a little glitz and glamour in the way of some apples and orange juice.
The glitz came in the way of a little fresh orange juice. Oranges are coming into season, buy a few and squeeze out the juice. You don’t need much, but that fresh juice will make a huge difference. I added a little bit of brown sugar and some of my favorite warm, savory spices. The glamour, apples! Apples glamorous? They are when they are baked with parsnips and lend their natural sweetness to this gorgeous Fall dish. The onions and garlic are kind of like Spanx. They work underneath all the flavors to make a smooth finish. It is a sweet and savory match up, and the winner is a healthy, low fat, delicious side dish.
